I can’t think of any foods that are more delicious! How about a sauce made from all of these foods!??!?! HECK YES!
This Monday, my best friend and I made many new raw vegan recipes from a few of her new cookbooks. In one of the cookbooks, Rawesomely Vegan, we found a recipe called “Magical Multidimensional Mole Sauce”, and read the ingredients, and thought, WOW, we NEED to make this! It’s all things that are usually found in the fridge and pantry, so it’s really easy to make whenever you feel inspired. It’s a twist on the Mexican classic which is usually made with plantains, chocolate and nuts. As I was adding in the ingredients to the food processor and the smells were filling the kitchen, I was in heaven! And with my first taste… I fell head over heels! It was even delicious without the addition of the avocado, so you can try it both ways and see which one you prefer.
Enough talk, here’s the recipe!
1 cup chopped tomato (I used a can of Italian tomatoes)3/4 cup banana, sliced
2 tablespoons onion, diced
2 tablespoons raw cacao or carob
1 tablespoon jalapeno pepper, seeded and minced (I used dried)
1 tablespoon olive oil
1 tablespoon agave syrup
1/2 teaspoon sea salt
1/2 teaspoon cinnamon
1/4 teaspoon cloves
1/2 teaspoon oregano
1/2 cup avocado
Makes about 2 cups.
1. In a blender, combine all ingredients except avocado. Process until smooth.
2. Add the avocado last and blend until the sauce becomes creamy.
Try it out! You won’t be sorry. You can use it as a garnish for a veggie burger, on top of tofu or tempeh, a salad dressing, on zucchini pasta or regular pasta… or just with a spoon!!!!
